My Mom’s Moist Banana Bread

  • 1 cup sour cream or yogurt (great way to use it up!)
  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp. vanilla
  • 2 large ripe smashed bananas (perfect for those 2 brown bananas on the counter nobody’s eating)
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 1/2 cups flour
  • Chopped nuts, raisins or chocolate chips are optional additions

Preheat oven to 350

Mix the sour cream or yogurt, sugar and oil. Then at the eggs, vanilla and bananas. Mix the remaining ingredients separately then combine. Pour in 2 greased loaf pans and bake for about 1 hour or until done. You can also make these as muffins, which require less baking time.
